I love easy and delicious food especially if it's also healthy. I used to hate pumpkin and I don't even know why. But recently I tried pumpkin - coconut milk soup and I loved it so we tried this recipe at home. Even though we put too much coconut milk, we really loved it and it's one of my favorite soups now. Pumpkin soup is perfect when you don't have much time for cooking but want to eat healthy. It's very lightweight, delicious and super fast to make!
